Firecracker Chicken

I've made this recipe countless times now, and when you're in the mood for a little bit of spicy and have got a little extra time to spare making dinner, this meal will not disappoint. 

Ingredients:

Step 1: Wash & cut chicken breast into "nugget-size" pieces. Place pieces into a large Ziplock bag & sprinkle with salt & pepper, to taste.

Step 2: Sprinkle cornstarch over chicken, seal the Ziplock tightly, & shake to coat all chicken evenly. In a small bowl, whisk together 2 of the eggs (leave the third egg aside, in case you need it.) 

Step 3: Heat vegetable oil in a large, deep, pan on high heat (enough to cover 3/4 of the nugget pieces.) Dip each piece of chicken in the beaten eggs & place into the oil. Cook for 4-5 mins on each side (or until golden brown.) Place finished pieces in a large bowl. *Make chicken in batches if they don't all fit in the same pan* 

IMPORTANT: *lower heat to medium if it gets too hot* 

Step 4: In a small pot, whisk together buffalo sauce, brown sugar, & red pepper flakes. Then place on stovetop to warm-up. (low-med)

Step 5: Once sauce is warmed up, pour into bowl with chicken & toss or mix lightly to make sure all pieces get coated.

Step 6: Serve with noodles* or rice & garnish with green onions (& extra red pepper flakes if you'd like)


Hot Honey Avocado Toast

This avocado toast is absolutely fire, quick to make, and one of my favorite things to whip up for breakfast. 

DISCLAIMER: If you are not a fan of the spice, don't scroll just yet. My dad doesn't like spicy foods so I make it sans-spice just for him and he still claims it's one of his favorite breakfast foods. 


Ingredients:

Step 1: Melt a pad of butter to a pan on low-med heat & crack eggs into the pan. Cover.

Step 2: Cut avocado open, down the middle & scoop into a bowl.

Step 2: Add cream cheese, hot honey*, honey, & red pepper flakes* to bowl & mash until it is all mixed together.  (**Do not add if you prefer it non-spicy)

Step 3: Cut ciabatta bread down the middle & toast. 

Step 4: Once the eggs are sunny side up (or whichever way you prefer) & the bread is toasted, place the bread on a plate, spread each piece with the avocado mixture, top with an egg, & add a sprinkle of red pepper flakes* & a drizzle of honey to garnish. Serve.
